If you're looking for a delicious and nutritious weeknight dinner that you can make in 30 minutes, this vegetarian curry is a great choice! It's packed with fiber and plant-based protein, and you can easily double the recipe to feed a larger family or to have enough for leftovers. When I make it, I use spinach instead of kale and I serve it over rice and/or with some garlic naan.
